One thing which bothers me quite often is the standard settings i.e. keybindings in Pharo.

We are all agree that this a problem. There are more than two projects in squeaksource that we should look at: keymapper and the other I don't remember the name. But in summary, it let you customize the shortcuts as you said (I think). The matter is that nobody has time to do that. It is a matter of download the package and try to make it work.
